Atkins Induction Dinner - Day 12 (Chicken and Sausage Cobb Salad)

We enjoyed another salad last night, just so we can prove to all the haters that Atkins Induction is filled with salads! Salads, salads, salads! (Marcia! Marcia! Marcia!) NOT! You can eat your 12-15g of Net Carbohydrate Foundation Vegetables any way you want them: as salads, as raw veggies, as cooked veggies! Just make sure you eat ‘em each day!

But, if Atkins Induction was filled with salad after salad after salad, it should be filled with this Chicken and Sausage Cobb Salad (or maybe my Big Mac Salad). Cuz it’s just that good! And easy too!

If you can cut up veggies, you can make this big ol’ Jethro Bodine salad. No time to cut veggies? Then buy, pre-chopped veggies at the market. No time to cook chicken? Buy a rotisserie chicken or rotisserie chicken breast meat at Costco. Heck, now you can even buy hard boiled eggs!

This Chicken Sausage Cobb Salad will satisfy you like no other and you won’t even realize you’re eating chicken sausages! Because this is one of my FD (Fast Day) rotations (not part of Atkins Induction), I made homemade lite Italian Salad Dressing, but use the full-fat stuff if you are doing regular induction. Fats help you absorb the eleventy billion vitamins and minerals you’re gonna get from eating this salad.

Ginormous Chicken and Sausage Cobb Salad:
6 ounces romaine hearts
4 links mini mozzarella and roasted garlic chicken sausage
2 ounces rotisserie chicken, HEB
1 large egg
1 ounce part skim milk mozzarella cheese, shredded
4 black olives, large, pitted, canned, Lindsay Ripe Olives, sliced
1 ounce avocado, cubed
3 ounces cucumber, peeled and cubed
1 ounce grape tomatoes, quartered or halved
3 tablespoons red bell pepper, seeded and diced
2 tablespoons Walden Farm Balsamic Dressing
2 tablespoons FD Dijon Vinaigrette—or your favorite light Italian dressing

Dessert (10 Calories; 0g Fat (0.0% calories from fat); 1g Protein; 0g Carbohydrate; 0g Dietary Fiber; 0mg Cholesterol; 0g Net Carbohydrate)
½ cup sugar free strawberry gelatin
